The lemon and the garlic play huge roles in making this lemon garlic chicken so incredibly flavorful and delicious.
When it comes to chicken recipes, I’m a firm believer that less is more, I mean I really don’t like to spend a lot of time cooking it (because chances are I’m planning to make it on a weeknight) and also because I really believe when you have good quality ingredients, you don’ really need a ton of things, you just need a couple of them and have a wow-worthy meal in no time.
I also really like to use things that are already in my pantry and kitchen, so those high-quality things need to be ingredients that I really use a ton of times and love to have around.
This lemon garlic chicken has all those things. It only uses ingredients that I have around and only a few of them. The result is way beyond delicious and incredibly tender. It’s citrus without being overpowering and it’s garlicky without being bitter. Also, the garlic and the lemon go together amazingly well.
I like to cook it in the oven and let it slowly roast in there. In my opinion, that’s what helps to build up the flavors so much and create an incredibly juicy and flavorful chicken breast.
Once it’s done I love to serve it with a couple of lemon triangles on top because, honestly, they look too cute to not add them.
Lemon Garlic Chicken Recipe
1 Pound chicken thighs
¼ Cup lemon juice
2 Tbsps garlic powder
1 Tbsp onion powder
2 Tbsps melted butter
2 Cloves
Salt and pepper to taste
1 Large potato, in wedges
2 Tbsps chopped parsley leaves
2 Tsps thyme leaves
Lemon triangles, to garnish
Directions
Preheat oven to 370F.
In a cooking bag, season the chicken with the lemon juice, garlic, onion, butter, cloves, salt and pepper.
Place in the fridge for at least 1 ½ hours.
Transfer the chicken to a baking pan, incorporate the potato wedges, and cover with a foil.
Bake for 30 minutes, remove the foil, sprinkle the parsley leaves and thyme over the chicken, and cook for another 15 minutes.
Remove from the oven and garnish the chicken with the lemon triangles.
Serve and enjoy.
