One Pot Zucchini Pasta

I have been trying to be more healthy lately so I put together this One Pot Zucchini Pasta to make with tomato sauce instead of making it with real pasta. Zucchini is pretty inexpensive right now so this a great veggie choice.

One Pot Zucchini Recipe

Ingredients

4 to 5 large zucchinis, slice on the mandolin
1 pint cherry tomatoes, halved
1/2 red onion, sliced
3 garlic cloves, minced
1 tbsp olive oil
1 cup, Ragu Pasta Sauce
Salt & pepper, to taste
Gratted parmesan, for topping
1/2 cup fresh basil, for topping

Instructions

Add all ingredients except toppings into large pot on medium heat.

Cover the pot with a lid and allow to cook for 15 minutes, stirring after 5 minutes.

Check to see if the noodles and onions are cooked to your liking. If not, cook in 5 minute increments.

Throw in the basil in the last minute and the parmesan and toss. You can also add more cheese to the top.

Divide the pasta onto separate plates and garnish with fresh basil. Serve warm and enjoy!

Zucchini Pasta I made this for dinner one night and then I thought that it would be a good quick way to eat lunch. I threw all the ingredients into ziplock bags for freezing. In the morning, I put the frozen bag on the counter and let it thaw until lunch. I make it quickly in a small pot cooking for only 10 minutes on medium.
