Very Berry Limoncello

This week I made a Very Berry Limoncello Recipe as part of a sponsored post for Socialstars #SweetNLowStars

Winter is the season when citrus are in season and at the best of their flavor. I was looking at a list of in season fruits when I came up with the idea of making homemade limoncello. You can preserve the refreshing flavor and enjoy it all year round by freezing  it.

Limoncello is a traditional Italian dessert liquor that is often served as digestivo after a meal. It is normally made with the peel of fresh organic lemons, 80 to 100 proof alcohol, water and sugar, but today I made it with Sweet’N Low instead. It’s a fantastic dessert drink and is exceptionally easy and inexpensive to make. The only difficult part of making limoncello is to be patient as it takes at least 6 weeks to produce a good one. This is my version with Vodka.

Limoncello Ingredients
7 large organic lemons
2 cups water
12 packets Sweet’N Low
2 cups of vodka (100 to 80 proof)
1 package organic mixed berry bag
2 springs of mint
2 lemon slices to garnish

Equipment
Microplane, zester or vegetable peeler
1 jar or other similar-sized container with a lid
Mesh strainer
Measuring cup
Small funnel
2 clean 16-ounce bottles or several bottles equalling similar volume

Instructions

Peel the lemons: Wash the lemons thoroughly and then use a microplane to remove the peels from all the lemons. Be being careful not to get any of the white pith as it will add bitterness to the limoncello. You can also use a peeler or a zester.

Cover the peels with vodka: Transfer the lemon peels to a jar and pour all the vodka over them. Screw on the lid.

Infuse the vodka: Let the lemon and vodka mixture infuse in the fridge for at least 4 days or as long as a month (6 weeks is said to be the sweet spot. The longer you let the mixture infuse, the more lemony your limoncello. Make sure to shake the jar daily.

Strain the vodka: Strain the infused vodka through the filter. You may need to stir the vodka in the strainer if the flow stops.

Prepare Sweet’N Low syrup: Prepare a sugar syrup of at least 1 cup of water and 12 packets of Sweet’N Low.  You can modify the Sweet’N Low to water ratio. Start with 12 packets and then slowly add a packet at a time until you are happy with the sweetness. The more Sweet’N Low you add will make a sweeter limoncello. Also, you can add water to mixture to make it smoother and easier to drink on it’s own.

Mix the sugar syrup with the infused vodka: Pour the sugar syrup into the infused vodka. Stir gently to mix. Taste and add additional sugar syrup if desired (see above)

Bottle the limoncello mixture: Insert the funnel in the neck of one of the bottles and fill with limoncello.

Chill and store: Chill the limoncello in the freezer for at least 4 hours before drinking. It can be kept in the fridge for up to a month or the freezer for up to a year or even longer!

Serve with berries & mint: Add berries, lemon slices, and mint to the limoncello.

  2. I’ve always wanted to make my own limoncello and this one looks very good and refreshing. I love that it has berries in it.
