One of the best things about Summer is that Watermelons are in full swing. Juicy, packed with a burst of flavor and super refreshing can it get any better than that? Short answer not. Expect when you mix it with some juice, a splash of beer and a whole lot of ice. Yes my friends, Fizzy Watermelon Cocktail is pretty much the official drink of Summer.
One of the great things about this recipe is that is so delicious that you can make it with or without the beer. You can pick if you want the spiked version or the mocktail edition and you know what? Both options are just as good and refreshing.
I like to make a big pitcher of it so everyone can grab a glass + it’s just plain easier to mix a lot in a pitcher than making single cocktails in glasses.
Really I’ve lost count the times I’ve made this recipe and every single one is a hit. And while following the recipe results in an out of this world good cocktail this is also one of those things that you can pretty much eyeball and tweak to fit what you have on hand. Is there anything better than a versatile cocktail recipe?
To make it I use watermelon juice, beer (I prefer the light ones for this recipe) or if you want to keep it alcohol-free, soda and then some lemon juice. While you can also make it sans the lemon juice, which is especially handy if you want to keep this even easier, I have found that the lemon/watermelon combo is so so good. There’s something about the tartness of the lemon that pairs so good with the watermelon and the beer.
Then I just mix everything in the pitcher and pour it over glasses filled to the brims with ice. So good my friends, so good.
Fizzy Watermelon Cocktail
Ingredients
3 Cups watermelon juice
1 Cup lemon juice
1/2 Cup sugar
4 cups light beer or lemon lime soda
Directions
In a pitcher mix the watermelon, lemon juice, sugar, and beer or soda.
Pour into glasses filled with ice.
Enjoy.
