Last summer, I found out that you can cut the top of a pineapple and plant it! Honestly, I was not expecting to be picking pineapples from my backyard a year later and using them to make this yummy Instant Pot Pulled Pork recipe. I’ve always killed everything I tried to garden so this was a huge surprise!
Pineapples just say summer to me and I am so ready for warm days lying by the pool eating this yummy pineapple pulled pork. I made the dish in the instant pot because it is my new favorite kitchen device. It has pretty much replaced the use of my slow cooker because it is so much faster. It makes cooking dinner a pretty easy task. You basically just throw in the meat with some chicken stock and let the pressure break up tough meat so that you can easily shred it.

WHAT IS PULLED PORK?
Pulled pork is a tender, fatty, and flavorful meat is usually made with pork shoulder (sometimes referred to as pork butt, Boston shoulder, or picnic shoulder), an inexpensive cut.
This slowly softens the connective tissue, making it so tender that it practically falls apart before it even needs to be “pulled.”
INGREDIENTS FOR INSTANT POT PINEAPPLE PULLED PORK
This Instant Pot Pineapple Pulled Pork recipe calls for Chicken Stock, Pork (I used a Boston Butt Roast), Hoisin sauce, and fresh pineapple.
TOOLS AND SUPPLIES TO MAKE INSTANT POT PINEAPPLE PULLED PORK
For this Instant Pot Pineapple Pulled Pork, I used my Instant Pot, these rainbow knives, measuring cup, and a masher.
HOW TO SERVE PULLED PORK
I like to serve my pulled pork on tortillas or buns, but you can easily skip the carbs and just eat in a bowl. We do that most of time because we are trying to lose weight. No matter how you eat this pineapple pulled pork, I know you are going to love it!
How to Make Instant Pot Pineapple Pulled Pork
Ingredients
2 Cups Chicken Stock
3.5 Pounds Pork (used Boston Butt Roast)
1/3 Cup Hoisin
1 Cup Pineapple, mashed
Instructions
First, I sliced the pineapple and cut out the hard inner core. Use a masher to juice and break up the pineapple into small bits and set aside.
Place the pork into the Instant Pot with 2 cups of low sodium chicken broth.
Close the lid of the on the Instant Pot and hit Meat/Stew button and set the timer for 90 minutes.
Make sure to close the seal. You don’t want the pressure to vent until the end.
Once the Instant Pot beeps after 90 minutes, let the pressure naturally release for 10 minutes and then vent on your own.
Strain most of the liquid out of the pot saving about 1/2 cup of water.
Shred the pork and return to Instant Pot.
Measure out 1 cup of pineapple and add pineapple with juice and hoisin sauce into the instant pot with the pulled pork.
Set on high pressure for 5 minutes.
Quick release the steam and serve on a bun or tortilla.

This is about the level of difficulty that I can handle – less than 5 ingredients and super easy! Looks yummy, too!!!!

These directions do not indicate if you are tow use low or high pressure on meat/stew button and I have both options. I am going to guess low since it is supposed to cook 90 minutes. It would
be good to update directions.

Worst experience I have ever had with pulled pork OR an IP. After 90 minutes on that setting I had raw rubber pork.
