Fresh Pineapple Salad Recipe

I recently discovered that you can grow pineapples in your backyard. Basically, you chop the top off and peel a few leaves off, stick it in water for a few weeks and then plant it. I have been buying up pineapples like crazy since I found this out. I am all about growing food in my backyard so this was a perfect way to start something new!! Each plant produces a pineapple one at a time. It takes about 16 months to 2 years for the plant to fruit. I like the way the plants look so I am happy to use them as decorations until they fruit!

The pineapple plants seem to be pretty resilient so far. I left them in little glass jars on the patio for a few months longer than it took for the roots to grow and they survived. I platted each of them in a large pot like this one and placed them around the pool as cute plant accents for summer.

Since I have all these awesome pineapples, I put together a pineapple salad to send in my daughter’s lunch and also to bring to my friend’s cooking party. This pineapple salad is a great side dish with ham, pork, BBQ ribs, and Asian dishes. I promised the guests at the party that I would post the recipe so that they could make it on their own. Here you go gals!!

Pineapple Salad Low Calorie

Ingredients 

2 Pineapples, sliced
1 tbsp Honey
1 Tbsp Lime Juice
2 Limes, zested
2 tbsp Ginger, grated
3 tbsp fresh mint leaves, sliced

Tools & Supplies

Large Mixing Bowl
Shredder Scissors
Cutting Boards
Microplane
Pineapple Serving Bowl
Serving Tongs
Sharp Knifes

Instructions

Cut the pineapples into bite sized pieces.

Peel the ginger with a spoon. I have found this to be the easiest and most efficient method.

In a large mixing bowl, toss together 1 tbsp Honey, 1 tbsp Lime Juice, zest from 2 limes, and 2 tablespoons grated peeled fresh ginger.

3 tbsp fresh mint leaves, sliced. I lay them on top of each other and then roll it so that you can make mint ribbons. My friend uses this cool shredder scissors to do it! I am dying to try it!!

Mix with serving tongs.

Just before serving toss the salad with sliced mint leaves and few whole mint leaves to make the salad look extra pretty.
