This Dairy Free Strawberry Ice Cream is not only vegan, but also compliant with the Paleo Diet and the Keto Diet. It is only made with 3 to 4 ingredients.

I am seriously obsessed with making Ice Cream. Normally, I make dairy free ice cream in my food processor with frozen bananas. Now, that I have a new ice cream maker, I am taking it up a notch with the consistency!

Strawberry Ice Cream

To make this Dairy Free Strawberry Ice Cream, I use Coconut Milk from the can and fresh strawberries.

You can also use frozen strawberries to make this ice cream as well.

Dairy Free Strawberry Ice Cream Ingredients

1 Can Coconut Milk (not lite)

1 Cup Strawberries, cut in 1/2 or 1/4

10 drops stevia

5 drops monkfruit

You can use whatever alternative sugar or even just sugar into the ice cream. In fact, you can skip sweetener all together. For me, I like a little sweetness.

I chose to mix 2 different liquid sweeteners together to get the best possible flavor without being over powered by any specific sweetener flavor. You can use whatever you have for a sweetener.

Granulated Sweetener NOTE

If you only have a granulated sweetener, you will need to dissolve it in liquid before you make the ice cream otherwise it will be grainy and the texture will suffer.

Canned Coconut Milk

The Best Canned Coconut Milk

The only way to get this ice cream right is by using canned coconut milk.

The best Paleo and Whole 30 Compliant Coconut Milk: Trader Joe’s Coconut Milk (available at Trader Joe’s), Whole Foods 360 Brand Coconut Milk (available at Whole Foods), Thai Kitchen Organic Coconut Milk (available for purchase on Amazon), Native Forest Organic Coconut Milk (available for purchase on Amazon), and A Taste of Thai Coconut Milk (it can be found at various grocery stores).

Canned Coconut Milk is what you are looking for when you are making homemade ice cream in the food processor or blender. If you are the store trying to figure out what canned coconut milk to get, make sure to avoid sulfates. Avoid Potassium Metabisulfite.

It is a common ingredient in canned coconut milk and is not Whole30compliant. Don’t Be Afraid of Guar Guam. It is allowed on Whole30, but it is better if you can find a brand without any guar gum.

Canned coconut milk is extremely healthy. One cup of canned coconut milk has more than 10 percent of your daily value of iron, magnesium, potassium, and zinc.

How to Make Dairy Free Strawberry Ice Cream? 

Start by putting the ice cream machine base into the freezer. According to the instructions for the ice cream machine, the base should be frozen at the back of the freezer standing straight up.

Once the base is frozen, add it to the ice cream maker with the fruit paddle.

Start the ice cream machine. Then, add the strawberries into the machine while it is moving.

Let it churn for 5 minutes with just the strawberries.

Then, open the coconut milk can and pour it into the ice cream maker as it is churning.

Add the liquid sweetener here. (see note about granulated sweetener if that is all you have in the house).

Set a timer for 18 minutes and let the coconut milk and strawberries turn into yummy ice cream.

Remove the ice cream from the ice cream maker using a spoon and adding it to a shallow tubberware or glass pyrex with cover.

You can enjoy the strawberry ice cream. It will come out with a soft serve consistency. You can also put it in the freezer to help it get harder.
