Grilled Artichokes are my favorite grilled side dish for summer. Artichokes are my favorite vegetable especially if tomatoes are a fruit. They have been on the top of my list since I was a child when my mother stuffed artichokes for me as a treat on Sundays. I would eat them one a day for the next few days and relished every bite. But it was a lot of work to stuff artichokes and as much as I loved them, I wanted to find an easier way to prepare them that was still delicious.

I found that way when I learned how to cook artichokes on the grill. It worked to perfect this recipe for quite some time, and with some trial and error, I finally fine-tuned my grilled artichoke recipe until it was ready to pass along to others. Now I am super excited to share this easy grilled artichoke recipe with you. It does not require the stuffing method that takes forever. Plus, with this artichoke recipe, you don’t just save time; you also save calories. Of course, my mom whined that she missed the stuffing, but we are all on Weight Watchers right now and these grilled artichokes are half the points of the stuffed version.

I am excited to share this artichoke recipe success with you! It makes a tasty healthy addition to any barbeque and it’s also a delicious vegetarian option for those who don’t eat meat. In fact, it made the list of the top five favorite healthy foods to grill this summer.

Marinade Ingredients for Grilled Artichokes

  • 1/2 yellow onion, finely diced
  • 2 garlic cloves, diced
  • 2 tsp kosher salt
  • 1/4 cup olive oil
  • 2 Tbsp butter, melted

 

Grilled Artichoke Marinade (1 of 1)

Grilled Artichoke Dipping Sauce Ingredients

  • 1/2 cup fresh parsley
  • 1/4 cup whole milk (will not work with 2% or skim)
  • 1 garlic clove
  • 1 Cup Vegtable Oil
  • 1 tsp salt

Tools & Supplies Needed for Making Grilled Artichokes

For this recipe I used kitchen sheers to snip off the pointed tips of the leaves before placing the artichokes in the steamer. Once they were steamed, I cut the artichokes in half using a cutting board and serrated knife. The food processor made quick work of dicing the onion and garlic and the marinade brush allows for easy and consistent application of the marinade before grilling. For cooking on the grill, grill tongs are the perfect tool for easing handling as you turn the artichokes.

Instructions for How to Grill Artichokes

 

Slice Artichokes

Grilled Artichokes1. Trim the stems. Then, slice the artichokes in half using a serrated knife.

3. Squeeze lemon juice and rub lemon wedges (equal to half a lemon) on top of the artichokes

4. Salt and pepper the artichoke halves.

5. Pour cold water into the steamer with a garlic clove.

6. Steam the halved artichokes over medium heat in a large pot for 30 to 45 minutes.

7. While they are cooking, make the grilling marinade.

8. Check at 30 minutes to make sure the water has not boiled away and also to see if the heart of the artichoke is tender enough to eat.

9. Let the steamed artichokes cool to room temperature.

10. Slice out the bitter fibers (hairs) and soft leaves in the middle.

11. Heat your outdoor grill to medium heat.

12. Brush the cut side of the artichokes halves with the grilling marinade, season with salt and pepper and place artichokes on preheated grill with inside part down for 2-3 minutes.

13. Turn and grill the outer leaves of the artichokes for 2-3 minutes as well.

14. Serve with Dipping Sauce.

Instructions for Marinade for Grilled Artichokes

  1. Use a food processor to dice half a sweet yellow onion and 1 garlic clove.
  2. Sprinkle salt on top.
  3. Melt 2 tablespoons of butter.
  4. Pour in the 2 tablespoons of melted butter and 1/4 cup of olive oil.
  5. Salt and pepper the artichokes and use a marinade brush to coat the inside and outside of the steamed artichokes before they go onto the grill.

Instructions for Grilled Artichoke Dipping Sauce

  1. Use a food processor to slice 1 cup fresh parsley and 1 clove of garlic.
  2. Add 1/2 tsp salt and 1/4 cup whole milk and mix again.
  3. Slowly add vegetable oil into the mixture until it is a thick dip consistency.
  4. You can add more salt 1/4 tsp at a time after trying the mixed dip. I like mine salty, but make sure to add it slowly because you can’t remove it once it’s added.

How Do You Eat Grilled Artichokes?

If you’ve never eaten an artichoke, don’t let their uniqueness intimidate you. They can be eaten hot, cold, or at room temperature. To eat a grilled artichoke:

  • Pull the outer leaves off one at a time.
  • Dip the leaf into the artichoke dipping sauce.
  • Instead of biting the leaf, pull it through your teeth to scrape off the pulpy flesh.
  • Discard the remainder of the leaf.
  • Repeat until you’ve removed all the leaves.

After all the leaves have been removed, you will be left with the fuzzy center at the base. Spoon this out and throw away. This reveals the edible heart of the artichoke. Cut and eat with the dipping sauce.
