I have been trying to perfect this recipe for a while. I am constantly trying to get a good bean soup recipe that tastes as good as the restaurant ones. I think I have found it!! Who knew that Mezzetta Olives were the secret ingredient!

Easy One Pot Black Bean Soup

Ingredients

1 Cup Mezzetta Olives
12 oz Chicken Stock
1 Pounds Chicken Tenders, Chopped in Small Pieces
2 Red Pepper, Sliced
1 Yellow Pepper, Sliced
2 Cups of Tomatoes, chopped in 1 inch pieces
4 Cans Black Beans
Garnish with diced fresh tomatoes, diced sweet onions raw or scallions.

Black Bean Soup Recipe

Instructions

Place all the ingredients in a large pot on high until boiling.
Lower the heat after it boils for 5 minutes.
Cover and let simmer for 1o minutes.
Take off the burner and leave covered until ready to serve.
Garnish with fresh tomatoes and raw onions.

  • 1 Cup Olives
  • 12 oz Chicken Stock
  • 1 Pounds Chicken Breasts Chopped in Small Pieces
  • 2 Red Peppers Sliced
  • 1 Yellow Pepper Sliced
  • 2 Cups Tomatoes chopped in 1 inch pieces
  • 4 Cans Black Beans
  • Garnish with diced fresh tomatoes diced sweet onions raw or scallions.
