Start your summer party off right with this pot luck friendly Fresh Corn Salad Recipe made with Fresh from Florida sweet corn, bell peppers, and tomatoes.

The summer season is almost upon us. We have been gearing up for the end of the school year by signing up for camp and setting up play dates to keep our kids busy all summer long.

The first of a long list of planned summer parties is this amazing Fresh from Florida gathering. I made a tasty fresh corn salad with Fresh from Florida tomatoes, sweet corn, and bell peppers. F

resh From Florida sweet corn and watermelon are now in season in Florida! The fresh sweet corn salad was definitely a crowd favorite at the party. 

As a healthy treat for the kids and the adults, I sliced up watermelon into wedges. Everyone loved the Fresh from Florida watermelon.

Fresh Corn Salad Recipe 

Summer Salad Ingredients

  • 1 red bell pepper 
  • 4 ears of sweet corn 
  • 1 avocado 
  • 12 oz Marinaded Artichoke Hearts 
  • 1 Tomato 
  • 2 tbsp Cilantro 
  • 1 garlic clove 
  • 1 tsp salt 

How to Make a Fresh Corn Salad? 

Wash and dry all the veggies before you cut them up. 

Start by boiling the corn for about 4 minutes or cooking them Instant Pot on high for 2 minutes. You could also grill the corn if you are making the corn salad the day of the BBQ summer party. You could also use frozen corn, but the Fresh from Florida corn is so much more tasty. 

Dice up the tomato and the red bell pepper into small bite sized pieces. 

Cut up the avocado into small 1/2 inch pieces. 

Use the garlic press to crush the garlic. 

Add all the chopped up ingredients into a large bowl. 

Using the kitchen sheers, cut up the cilantro and add to mixing bowl. 

Juice 1 lemon into the mixing bowl on top of the veggies. 

Then, cut up the marinated artichoke hearts. I use my kitchen sheers to cut them. 

After I am done cutting up the artichokes, I pour half of the marinade from the jar into the mixing bowl. 

Add 1 teaspoon of salt and mix everything together. 

Let the corn cool. 

Using a knife or corn stripper, take the corn kernels off the cob. 

Then, add to the kernels in a large mixing bowl and mix all together. 

Finally, you can serve within 2 days. 

Notes

You can also add red onion and black beans to the summer salad. Also, if you do not have lemon or lime juice or lime dressing, you can replace it with cider vinegar and olive oil instead.
