This One Pot Chicken Lo Mein Recipe can a real blessing! Making dinner can nearly impossible when I am juggling working, a toddler that likes to get into everything, and trying to make something that tastes good. Most nights, I don’t have time to cook.
What are One Pot Recipes?
I started doing some research on how to get the cooking done quickly and found a group of recipes called one pot recipes. They only require one pot to cook everything in the dish. It makes me insane when I see recipes that require the use of tons of pots and pans. Who wants all that cleanup? Certainly not me…no time for all that craziness especially during the holidays.
Homemade Chicken Lo Mein
One Pot Chicken Lo Mein is a new twist on a holiday favorite in our house – Chicken Lo Mein. My husband’s family usually orders Chinese Food on Christmas Eve so that we only have to cook one meal over the holidays. This tradition has replaced the Feast of the Seven Fishes that my family usually celebrates. Most of my immediate family prefers Chinese Food over the fishes that are served on the Feast of the Seven Fishes, including, but not limited to salted cod and Octopus salad. Just imagine what this holiday was like for a child (me) that hated eating fish…horrific!
