How to Make Strawberry Cream Cheese Frosting?
Firstly, start by taking the cream cheese and the butter out the fridge to let it soften. It takes about 30 minutes.
While you wait, start by slicing the strawberries.
Heat a small pot on medium heat. Add the strawberries, water, and 1 tablespoon of powdered sugar.
Reduce the mixture from 1 cup to a 1/4 cup of strawberry mixture. Keep mixing so that the mixture does not burn or stick.
Once the strawberries are reduced, set the pot aside.
Now, sift the powdered sugar to make a nice smooth frosting. This is key to avoid graininess in the icing.
Add the butter into the stand mixer and mix for 2 minutes by itself.
Then, add the cream cheese into the stand mixer.
Next, add the reduced strawberry mixture into the stand mixer with the butter and cream cheese. Mix on medium speed for 2 minutes.
Then, add the powdered sugar in 3 parts. Add the first part and mix for 2 minutes.
Use the spatula to scrap the sides of the stand mixer and remove mixture stuck to the paddle.
Add the second part of the powdered sugar. Mix again for 2 minutes. Use the spatula again if needed.
Finally, add the 3rd part of the powdered sugar. Mix for 2 minutes or until everything is combined. Use the spatula to push down anything that is not getting mixed.

I don’t see where you added the vanilla. Only see it listed in the list of supplies.:-)
When do you add vanilla?
It does say to add 2 teaspoons vanilla extract
I don’t see Vanilla in the ingredient list. But if you want to add some just don’t add it while cooking the strawberries. Any time after that it will maintain it’s strength regardless of when you add it. 😊
