What is a Poke Cake? 

It is extremely simple cake that is usually made in a sheet. Then, you use a wooden spoon to poke holes in the cake to be filled with pudding, fruit reduction, or jello. It is made quickly and usually from box cake! 

Poke Cake is for novice bakers like me. My husband is the real baker, but I delight and surprise myself with my ability to make poke cakes!

Lemon Strawberry Poke Cake

You can make Lemon Strawberry Poke Cake either using strawberry cake and lemon pudding or lemon cake and strawberry pudding.

If you have some other flavors, you can turn your flavors into lemon and strawberry with the help of some strawberry jelly and lemon juice. Work with what you have on hand! Just throw a scoop of strawberry jelly into the whipped cream or pudding!

These are the ingredients to make strawberry lemonade poke cake at home from items in your pantry! 

Top Layer of the Poke Cake 

For the top layer of the poke cake, you can use a few things that you might have in your pantry already. 

  • Cream Cheese 
  • Cool Whip Whipped Topping 
  • Homemade Whipped Cream 

How to Make Lemon Strawberry Poke Cake? 

Firstly, pre-heat the oven with 350 degrees F for glass or metal pans. 325 degrees F for dark or coated pans. 

Secondly, grease the pan with shortening or cooking oil spray.

Next, start by mixing the cake mix with 1 cup of water, 3 large eggs, and 1/3 cup of vegetable oil at low speed for about 30 seconds. 

Then, beat the batter at medium speed for about 2 minutes. 

Pour the cake mix into the rectangular shaped pan. 

Bake in the center of the oven based on pan size. 

2 – 8 inch pans = 26 to 29 minutes 

2 – 9 inch pans = 24 to 27 minutes 

13 x 9 inch pan = 24 to 27 minutes 

Bundt Pan = 30 – 35 minutes 

24 cupcakes 15 – 18 minutes 

Since we used a 13 x 9 inch pan, our bake time was 24 to 27 minutes. 

Use a tooth pick to check doneness. It should come out clean. 

While the cake is baking, you can make the lemon pudding. 

How to Make Lemon Pudding? 

Open the package of Jello Pudding into a bowl and mix in 2 cups of cold milk. Whisk the milk and lemon pudding for 2 minutes.

The pudding will be soft set in 5 minutes. 

While you wait for the cake, you can make whipped cream. If not, you can use cool whip or whipped cream cheese.

How to Put together the Poke Cake? 

Take the cake out the oven and let it cool. 

Let the cake cool completely

Once you have a cooled cake, use a the back of a wooden spoon to poke holes in the cake in a line pattern.

Then, pour the lemon pudding on top of the cake using the wooden spoon so that the pudding fills in the holes you just poked.

Top the cake with whipped cream or another whipped topping like cool whip.

Smooth out the whipped cream using a wooden spoon. 

Use Cool Whip on top

Add fresh strawberries on top to decorate the cake. If you have fresh lemons, you can add strawberries and lemon rounds or lemon zest.
