Cheesecake and strawberries top the list of my favorite foods and desserts. These mini strawberry cheesecakes were a natural combination that came together perfectly. You will fall in love with them like my family did. These yummy strawberry cheesecakes are delicious and perfect for your next party or gathering or just for any day to bring it some extra joy.

Mini Strawberry Cheesecakes

I recently made mini lemon cheesecakes that were a big hit! I decided to give fresh strawberries a try. Of course, I figured out that I love them even more than the lemon cheesecake. Strawberries are truly superstar fruits.

The amazing strawberries that I used in this cheesecake recipe are Fresh from Florida. We are big fans of buying local and supporting Florida Farmers.

  • Unsalted Butter
  • Cream Cheese
  • Plain Yogurt
  • Sugar
  • Large Eggs
  • Fresh from Florida Strawberries
  • Graham Crackers or Graham Cracker Crumbs

Creative Ways to Decorate your Mini Strawberry Cheesecake

Feel free to allow your creativity to shine! But if you are having a block and can’t think of some ways to decorate them, here are some ideas to get you started:

  • Whipped Cream – If you are in a pinch for time, just top with a dollop of whipped cream of cool whip.
  • Strawberry Sauce – Use the extra strawberries to create a strawberry sauce. Use the food processor to pulse the strawberries. In a saucepan, combine strawberries and sugar. Place over medium heat and bring to a boil, stirring occasionally. Reduce heat and simmer 20 min or until sauce is thickened, stirring occasionally. Remove from heat and cool to room temperature.
  • Fresh Strawberries – You can add sliced strawberries to the top of your mini cheesecakes.

Items You Also Need

  • Muffin Tin
  • Silicone Muffin Liners
  • Food Processor
  • Electric Mixer or Stand Mixer
  • Measuring Cups
  • Oven

How to Make Mini Strawberry Cheesecake?

Preheat oven to 300F. Line 12 muffin tins with silicone liners. Lightly spray with oil. Set aside.

In a small food processor, process graham crackers into crumbs, then pulse together with butter until combined.

Evenly divide graham cracker mixture into the bottom of the liners.

Divide between the 12 liners, pressing with back of tablespoon to flatten or use your clean fingers.

Bake graham cracker crust for 15 minutes. Set aside to cool for 10 minutes while you make the filling.

Use a food processor, to chop up the strawberries.

In a medium mixing bowl using electric mixer or stand mixer, beat together softened cream cheese until light and fluffy.

Add in yogurt and sugar, beating again until smooth.

Then add in egg, egg white, and chopped up strawberries. Beat until just combined.

Evenly distribute cheesecake batter into liners with baked graham cracker crusts.

Bake the mini cheesecakes for 15 minutes, until the middle is set.

Remove from oven and allow pan to cool to room temperature, then place in fridge to chill for 2 hours before serving.

Can You Freeze Mini Cheesecakes?

You can freeze mini cheesecake for up to one month. Keep them in the silicone cupcake liners to that they don’t loose their shape.

These delectable Mini Strawberry Cheesecakes made with Fresh from Florida – fresh strawberries, plain yogurt, and cream cheese bite-sized desserts

  • 1 1/4 cup graham cracker crumbs (about 8-10 crackers)
  • 6 Tablespoons  Butter
  • 8oz cream cheese, softened 
  • 1/3 cup plain yogurt

  • 1 large egg white
  • 4 large Fresh from Florida Strawberries (1/2 Cup Strawberry Puree)

Notes

The prep time includes chilling the mini cheesecakes. These Strawberry Cheesecakes could be made a day in advance as well, chilling the cheesecake cups overnight. You can also freeze them for up to a month.
