This week I made an amazing new brunch favorite, Mango Mimosa. Brunch is my favorite meal of the week! Its breakfast with mimosas! Who wouldn’t love that!?

I have a book club that meets for brunch once per month and I am really thinking about starting a brunch club that is all about cooking.

Each month or even week, one participant will host the others making a decedent brunch menu and amazing cocktails! Here is my first brunch club cocktail – Mango Mimosa.

Mango Mimosa Recipe

If you love classic mimosas, you will love these! Mango juiced fresh is a delicious alternative to orange juice. You should serve in a champagne flute to prevent the sparkling wine from going flat.

Mango Mimosa Ingredients

  • 2 cups Mangos
  • 1/2 Cup Water
  • 1 bottle Champagne

If you do not have fresh mangos on hand, we have successfully made mango mimosa with Torani syrup. Using the mango sugar free syrup is a great way to make this recipe low carb and Keto Friendly.

You can use use any sort of sparkling wine you choose to make these mimosas. My favorite choice is a sparkling brut wine that is on the dryer side rather than choosing a sweet wine.

I would avoid mixing pink sparkling wine with the yellow as the color comes up more orange and is not as nice as the bright yellow of classic mimosas.

How to Make a Mango Mimosa with Fresh Mangos?

Start by washing the mangos thoroughly. Then, cut the bottom off of the mango.

Next, stand the mango straight up and slice off the sides. The pit is rather large and the size a disk that is larger in the middle.

Use a spoon to scoop out the mango.

Add the diced mangos and seeded into a blender or food processor.

Blend the mango with 1/4 cup of water per cup of mango meat. In my case, it was 1/2 cup of water. It

In a blender, puree mango until smooth.  You can strain the mango, but that is a personal preference. It is up to you if you want pulp or not.

If you want to remove the pulp, strain with a fine mesh strainer. Discard solids.

Pour mango liquid into pitcher or straight into the champagne glasses.

If you add to the pitcher, add 1/2 bottle of sparkling wine stir until well combined.

Divide mixture between 6 champagne glasses; top each glass with 1/3 glass of champagne.

If the mango juice is mixed in the glasses, the split is 1/3 mango juice and 2/3 sparkling wine.
