Mango Lemonade Mimosa

This week I made an amazing new brunch favorite, Mango Lemonade Mimosa as the part of a sponsored post for Socialstars. #donthesitaste Brunch is my favorite meal of the week! Its breakfast with mimosas! Who wouldn’t love that!? I have a book club that meets for brunch once per month and I am really thinking about starting a brunch club that is all about cooking. Each month or even week, one participant will host the others making a decedent brunch menu and amazing cocktails! Here is my first brunch club cocktail – Mango Lemonade Mimosa.

It’s light on the waistline because instead of sugar, I used Sweet ‘N Low. It lets you enjoy sweet, low-calorie beverages that are perfect for summer brunch. It helps me reduce calories in drink recipes. Why drink your calories, when eating them is so much more fun!!? I am also obsessed with this Mango Ice Tea Recipe.

Mango Lemonade Mimosa Ingredients

  • 18 packets Sweet ‘N Low
  • 3/4 cup pineapple or mango flavored vodka
  • 2 mangos, peeled, pitted, and chopped
  • 1 1/2 cups fresh lemon juice
  • 3 cups champagne

Mango Lemonade Mimosa Sweet 'N Low-1006

Directions

Juice 6 medium lemons to get 1 1/2 cups of lemon juice.

Juicing Lemons

In a blender, puree mango, Sweet ‘N Low packets, lemon juice until smooth.  Strain with a fine mesh strainer. Discard solids.

Pour mango liquid into pitcher. Add vodka and stir until well combined. Divide mixture between 6 champagne  glasses; top each glass with 1/2 glass of champagne.
