My husband and daughter are both huge fans of pizza and burgers. They love for me to make Mini Bacon Cheeseburger Pizza. It is not uncommon to hear the pizza chant whenever the word is brought up….even if there is none in the house. I decided to make a little treat that worked great for dinner and also would be an amazing appetizer for my next party. This is an easier way (and cuter) to serve burgers at your next party.

Mini Bacon Cheeseburger Pizza
Ingredients
1 Tube Pilsbury Pizza Crust
1 Cup Cheddar Cheese, Shredded
4 oz Block Cheddar Cheese
1 Pound Lean Ground Beef
6 Pieces of Bacon
1/4 Cup Red Onions
Reduced Sugar Ketchup
Yellow Mustard (or spicy if you like that on your burgers)
Instructions
Preheat oven to 400°F.
Slice the bacon into 1 inch pieces. In a sauté pan, saute the bacon for 4 minutes on Medium heat.
Add the ground beef to the pan and sauté for 4 minutes or until the meat is broken up and brown and the bacon is crisp. Add 4 oz of block cheese to the mixture and allow to melt and coat beef mixture. Take off the heat and set aside.
Open the biscuit tubes and flatten with your hands on to a cookie sheet lined with Reynolds Cookie Baking Sheets Non-Stick Parchment Paper (these are my faves because they are pre-cut).
Using a slatted spoon, scoop the beef and bacon mixture on to the mini dough pizza.
Drizzle ketchup and mustard on top.
Slice the red onions and place on top of the beef and bacon mixture.
Add the shredded cheddar cheese to the top being careful to keep it on the pizza.
Bake in the oven for 15 minutes.
Take out and serve with Ketchup and Mustard on the side.
Note: You can wait and put the cheese on when you have 5 minute left so that the cheese just has enough time to melt. It works either way. Also, I tried putting the ketchup and mustard on last, that works too. If you are having a party, you can let your guests do this so they get the exact amount they want.
