With the Super Bowl around the corner, I decided to make a beautiful baked potato recipe that makes it easy to eat as an appetizer. I love making the food appealing for both the eye and tummy especially when guests are coming over. The party display for Super Bowl is always fun. I like to grab a football tablecloth to protect the table from the mess. Also, to make the clean up even easier, I pick up football plates, green silverware, and stripe ref napkins. You can also get creative with these football scrapbook sheets.

Mini Overstuffed Baked Potato Recipe
Ingredients
12 Baby potatoes (one or two bite size)
2-3 rashers Bacon, cooked, finely chopped
1 Green onion, finely chopped (1/4 tsp of the green reserved)
2-3 tsp Sour Cream
½ C Shredded Cheddar, reserving a few tbsp. aside
as desired Salt, pepper, garlic powder
Directions
Preheat oven to 375
Wash and pat dry the potatoes. Lay them out on a baking sheet and bake in the oven for approximately 50 minutes to 1 hour.
Remove from oven and let cool.
With a knife, cut a “V” shape into the top of the potato. Remove the skin and with a very small scooper or even the knife, remove the insides of the potato. Remove about ½ of the insides, leaving a “bowl” shape for the potato to hold the filling. Careful not to puncture or remove too much of the potato.
In a bowl, combine the bacon, onion, cheddar, sour cream, and seasonings. Mix well and taste for desired seasonings.
With a small spoon, place little dollops back into the potato, slightly pushing down to be sure and fill the inside of the potato. Add a small amount on top of that to form a small mound of filling on the top of the potato.
Place them back onto a baking sheet and sprinkle the reserved cheese over the top.
Bake again until the cheese is melted.
Remove from the oven and place a tiny dollop of sour cream and the reserved green onion on the very top.
