I love desserts that are easy, simple and delicious, and these Strawberry Shortcake Bars cover all those things with straight A’s. Seriously, friend, this is going to become your go-to dessert recipe, and you’ll find yourself making it again and again.
I especially love that this recipe is a total crowd favorite, and I’m talking about the “please share the recipe” and the “Oh my gosh I can’t stop eating” type of crowd favorite. I seriously haven’t found the first person that doesn’t like it or that doesn’t rave about it.
For me the reason everyone likes it so much is because this is really jam-packed with a ton of strawberry flavor, but it doesn’t have sweet berry chunks in it, so the cake is really smooth and really really easy to slice and store. So how can it be made without berries and still pack berry flavor? Well, it’s made with strawberry pudding!
Using strawberry pudding in your Strawberry Shortcake Bars is great for two reasons, first, you get all the berry punch and second your cake get’s super moist and fluffy. Using pudding in any cake recipe is a great way to pack it with extra moistness, actually, most cake mixes have pudding in them!
Once your cake is done, you can serve it as is, or top it with some roasted berries and a drizzle of honey. This goes deliciously good as well with a couple of scoops of vanilla ice cream, and since the cake is firm, you can also roast it and serve it with some bananas and whipped cream for a grilled ice cream sundae twist.
Whichever option you pick this cake is super versatile, and it’s going to become a staple in your recipe book.

Ingredients
2 Cups flour
1 Cup sugar
4 Tbsps butter
1 Tsp baking soda
¼ Cup strawberry pudding
1 Egg
1 Cup milk
