There is nothing worse than letting fresh veggies go to waste. That is why I decided to make a fresh tomato cucumber salad from the tomatoes that my hubby accidentally bought instead of my tiny little that I needed for a recipe.

Tomato Cucumber Salad Ingredients
- 2 Tbsp Avocado Oil or Olive Oil (I have been using avocado oil lately, but both work – see more info below)
- 1 Tbsp Red Wine Vinegar
- 1/4 Tsp Black Pepper
- 1 Tsp Salt
- 1/2 cup red onions, diced
- 2 Tbsp roasted red pepper, diced
- 1 Jalapeno, cored and diced (~ 2 TBSP)
- 5 Medium Tomatoes, wedged
- 3 Small Cucumbers, diced (~ 2 cups)

Is Avocado Oil Good for You?
We are always hearing that avocado oil has healthy fat. That healthy fat is heart-healthy oleic acid, a monounsaturated omega-9 fatty acid. This fatty acid is the same as in olive oil.
How to Cut Tomatoes for a Salad?
Start by cleaning the tomatoes.
Use a knife that is sharp and serrated.
Cut Tomato in half cutting through the core.
Use the serrated knife to cut out the core using a V.
Place the tomato cut side up and slice lengthwise into wedges.
How to Make a Cucumber Tomato Salad?
Cut the tomatoes into wedges.
Dice the onions.
Deseed Jalapeños and dice them up.
Add Salt & Pepper
Mix all ingredients into a large bowl.
Cover and let sit in the refrigerator for at least an hour.
Serve within 3 days.

Ingredients

- Cut up all the veggies and spices.

I think this would be a great salad, but I noticed that the recipe video and the recipe picture are not the same. The picture shows yellow pepper but it’s not in the recipe. Are there any other differences in the ingredients?
